But this roasted asparagus with goat cheese and pine nuts might be one of my favorites! It’s so delicious, even my 13-year-old nephew was sneaking extra helpings. And that’s saying something.
The goat cheese adds a wonderful creaminess along with a nice boost of protein. And the pine nuts give us fantastic texture with some healthy fats as well.

How to make roasted asparagus with goat cheese and pine nuts
This tasty vegetable dish is so simple to make and can be ready in about 15 minutes!
Step 1: Preheat the oven to 400° F and line a baking sheet with parchment paper.
Step 2: Bend each stalk of asparagus until it snaps, then discard the woody end.
Step 3: Add all of the spears to a colander, then rinse and drain.
Step 4: Place the asparagus in a large bowl, then toss with the olive oil, salt, and pepper.
Step 5: Transfer to the prepared baking sheet and spread out the spears. They do not have to be in a single layer.
Step 6: Place the baking sheet in the oven and roast the asparagus for 10 to 15 minutes or until tender.
Step 7: Remove from the oven and top with goat cheese and pine nuts.
Divide into 6 servings, then dig in!
Variations for this recipe
I just love the way the tangy goat cheese and buttery pine nut flavors go with the roasted asparagus. It tastes like a side you’d order at a 5-star restaurant.
But if you don’t have goat cheese or pine nuts on hand, don’t worry! There are plenty of ways you can modify this recipe.
In place of the goat cheese, you could use cream cheese or mascarpone. Both are milder in flavor, but wonderfully creamy. On the other hand, for even more tangy flavor, try using feta instead.
Don’t have pine nuts? Any crunchy nut will work just fine!
Pistachios will be the closest in flavor, but almonds, walnuts, pecans, or other common nuts are all great substitutes. For larger nuts, I recommend chopping them into smaller pieces.
This dish is best served right away. The hot asparagus will make the goat cheese extra creamy!
But if you find yourself with any leftovers, you can store them covered in the refrigerator. Make sure to enjoy within 3 days or so.
