Chicken Meatballs (Low-Carb)
These tasty chicken meatballs are low-carb and only take about 5 minutes to prep! Serve them as a healthier take on your favorite classic Italian recipes.
- 1½ pounds ground chicken
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon onion powder
- black pepper to taste
- 1 tablespoon olive oil
- 1 teaspoon Italian season
- ¼ cup grated Parmesan
- 1 teaspoon flax seed powder
- 1 egg
Preheat your oven to 400°F (200°C) and line a baking tray with a silicone baking sheet or tin foil. Grease and set aside.
Add all of the ingredients to a large mixing bowl.
Stir until all of the ingredients are well-combined, then let the mixture rest for about 5 minutes.
After the mixture has rested, roll into 12 meatballs and transfer them to the baking tray.
Place the tray in the oven and bake for 30 minutes until the meatballs are slightly golden and fully cooked through.
This recipe is for 4 servings. If you make 12 total meatballs, then each serving is 3 meatballs.
Leftovers can be stored covered in the refrigerator for up to 5 days.
