Goat Cheese Bites with Pistachios
The creamy filling of these goat cheese bites is mixed with honey and cinnamon, served in flaky phyllo shells, and topped with pistachios for an irresistible treat!
- 1 box frozen mini phyllo shells (about 12 shells - 1.9 ounce)
- 2 ounces goat cheese (softened)
- ½ cup cream cheese (whipped)
- 1 teaspoon lemon zest
- pinch cinnamon
- 1 teaspoon honey
- 3 tablespoons pistachios (chopped)
Preheat the oven to 350°F.
Place the frozen phyllo shells on a baking sheet and bake for about 3 minutes or until crisp. Remove from the oven and allow to cool.
Meanwhile, combine the goat cheese, cream cheese, lemon zest, cinnamon, and honey in a food processor.
Blend until smooth, scraping the sides at least once.
Pipe or spoon the cheese mixture into the phyllo shells and top with chopped pistachios.
This recipe is for 6 servings of goat cheese bites. Each serving includes 2 bites.
Chopped pistachios can be substituted with any other type of chopped nut.
These bites are best served right away to preserve the crispiness of the shell. Any extras can be stored in an airtight container in the refrigerator for up to 4 days.
