Key Lime Date Balls with Pistachios

- ½ cup pitted dates
- 1 cup shelled pistachios (divided)
- 3 tablespoons key lime juice (or fresh juice from 3 key limes)
In a food processor, combine the dates, ¾ cup of pistachios, and lime juice. Process until the mixture starts to clump and come together in a ball.
Chop the remaining ¼ cup of pistachios and place them in a small, shallow bowl.
Use a 1½-inch cookie scoop or spoon to shape the date mixture into balls. Roll them in your hands, then in the chopped pistachios until well-coated. Cover and refrigerate for at least 1 hour.
This recipe is for 10 key lime and pistachio date balls.
You can use 3 tablespoons of key lime juice or fresh juice from 3 key limes.
Leftovers can be stored covered in the refrigerator for up to 2 weeks.
