Smoked Salmon Cucumber Rolls

From a quick lunch to a fancy appetizer, smoked salmon cucumber rolls with honey mustard are perfect for any occasion! Delicious, satisfying, and so easy to make.

Ingredients 

  • 2 tablespoons honey
  • ¼ cup Homemade White Wine Mustard, (or store-bought mustard)
  • 12 ounces thinly sliced smoked salmon, (cut into strips about 2 x 4 inches)
  • 1 cucumber, (seeded and cut into 2½-inch strips)

Instructions

  • Heat the honey for about 10 seconds in the microwave to make it easier to blend.

  • Combine the honey and mustard in a small bowl.
    2 tablespoons honey, ¼ cup Homemade White Wine Mustard
  • Place a strip of salmon on a cutting board. Spread on a thin layer of the honey mustard mixture, place 2 or 3 cucumber strips at one end of the salmon strip, then roll it all up. Move the roll to a serving dish.
    12 ounces thinly sliced smoked salmon, 1 cucumber
  • Repeat with remaining salmon strips.

Notes

This recipe is for 20 servings. Each serving is 2 salmon rolls.
Trim the strips of salmon a bit narrower than the strips of cucumber are long so a little cucumber will poke out of each end.
Extras can be covered or placed in an airtight container and stored in the refrigerator for up to one week.
