Lemon-Lime Vinaigrette

This citrus-based dressing is perfect for the four-bean salad.

Ingredients 

  • 1 cup olive oil, (extra-virgin)
  • ¼ cup Champagne vinegar or white wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • teaspoons freshly squeezed lemon juice
  • teaspoons freshly squeezed lime juice
  • 1 clove garlic, (roughly chopped)
  • ½ teaspoon kosher salt
  • freshly ground black pepper

Instructions

  • Add the olive oil, vinegar, mustard, honey, lemon juice, lime juice, garlic, salt, and pepper to a blender and blend until smooth.
