  • 1 cup balsamic vinegar
  • 2 ounces prosciutto
  • 2 heads frisée lettuce rinsed and carefully dried
  • 6 ounces arugula rinsed and carefully dried
  • 1 shallot sliced
  • ½ pint strawberries diced
  • 4 tablespoons extra virgin olive oil
  • Salt & pepper to taste
  • 2 ounces feta cheese crumbled


  1. Preheat oven to 350°F. Simmer balsamic vinegar and reduce by half. Set aside.
  2. Place prosciutto in a single layer on parchment paper and bake for 10 minutes, until crisp. Set aside.
  3. Place frisée, arugula, shallots and strawberries in a bowl and toss with olive oil, salt and pepper.
  4. Place salad on plates and sprinkle with crumbled feta. Drizzle reduced balsamic vinegar and garnish with prosciutto chips.
