Zucchini Roll-ups with Goat Cheese and Peppers

Looking for an easy low-carb snack or appetizer? These zucchini roll-ups with goat cheese and peppers only need 4 ingredients... and no cooking required!

Ingredients 

  • 2 medium zucchini, (ends trimmed)
  • 1/2 teaspoon kosher salt
  • 1 large bell pepper, (any color, seeded)
  • 2 ounces garlic and herb goat cheese, (at room temperature)

Instructions

  • Place two layers of paper towels on a rimmed baking sheet.
  • Using a mandoline, thinly slice the zucchini lengthwise into ⅛-inch thick strips. You should have about 16 slices.
  • Place the zucchini strips on the paper towels, salt both sides, then let them sit for 10 to 15 minutes.
  • Meanwhile, slice the bell pepper into thin strips that are just a little bit longer than the zucchini is wide.
  • Blot the zucchini dry on both sides with fresh paper towels to remove the excess moisture and salt.
  • One at a time, place a zucchini strip on a cutting board and spread the goat cheese on one side.
  • Add a few strips of bell pepper at one end of the zucchini strip, then start at the end with the red pepper and roll up the zucchini.
  • Repeat with remaining zucchini.

Notes

This recipe is for 8 servings. Each serving is 2 roll-ups.
Make sure to blot dry the zucchini right away. Otherwise, the roll-ups will taste too salty.
Don't have a mandoline? Slice your zucchini crosswise into rounds, then spread the goat cheese onto the slices and top with chopped bell pepper.
This dish is best enjoyed right away. Any leftovers can be stored in an airtight container in the refrigerator and should be enjoyed within a day or two.
