Roasted Shrimp with Cream Cheese and Prosciutto

Ingredients 

  • 1 teaspoon olive oil
  • 3 ounces prosciutto, (thinly sliced)
  • 3 ounces spreadable cream cheese, (softened)
  • 12 large shrimp, (peeled and deveined)
  • 12 fresh basil leaves

Instructions

  • Preheat the oven to 400°F. Brush a baking sheet with olive oil.
  • Slice each piece of prosciutto in half lengthwise. Spread about ¼ of an ounce of cream cheese onto each slice.
  • Working one at a time, place a basil leaf over the back of a shrimp, then wrap the shrimp with one slice of prosciutto. Place on the prepared baking sheet.
  • Repeat with the remaining shrimp.
  • Place in the oven and roast for 8 to 10 minutes or until the shrimp is opaque and firm.

Notes

This recipe is for 4 servings. Each serving is 3 prosciutto-wrapped shrimp.
To lower the salt, use low-sodium ham instead of prosciutto. To reduce the fat, use low-fat or nonfat cream cheese and spread in a thinner layer.
Any leftovers can be stored in an airtight container in the refrigerator and should be enjoyed within a day or two.
