Are you trying to eat more leafy greens? Try sneaking in some for breakfast with this zippy spinach smoothie featuring apples, grapes, and other fruit. You can even drink it in the car on your way to work.
My doctor recently shared a recipe for a spinach smoothie that includes mineral water as an ingredient. (You exchange recipes with your doctor too, right?) I’m usually not a fizzy water fan; actually, I don’t drink many carbonated beverages at all. I wasn’t sure I was going to like it.
Then I remembered attending the Eat, Write, Retreat conference in Philadelphia last May. Gerolsteiner was one of the sponsors and mineral water flowed freely all day, every day. Thirsty and trying to be open-minded, I tasted it. It was the best mineral water I’ve ever had.
I still prefer drinking non-carbonated water, but I love the zip that the mineral water fizz gives this spinach smoothie.
I used my Vitamix (affiliate link), but you can still make this spinach smoothie if you have any blender capable of crushing ice. You may need to cut the fruit into smaller pieces and crush your ice some first. Refer to the instructions that came with your blender.
- 3 cups spinach
- 20 seedless grapes
- 1 pear cored and cut in half
- 1 peach/nectarine pitted and cut in half
- 1 apple cored and cut in half
- 11.2 ounce bottle mineral water
- Add all ingredients to Vitamix container in the order listed. Use the “Smoothie” setting and wait until machine stops.
- Pour into glasses and serve immediately.
