Looking for a healthy and tasty way to start the day? These garlic home fries with kale are easy to make and perfect with homemade ketchup or eggs over-easy!

On busy weekday mornings, I usually want something quick and easy to feed the family and myself. But on the weekends, I love to take my time to make a fun and delicious breakfast.

These garlic home fries with kale are one of my weekend favorites! The potatoes turn out so wonderfully crispy while the garlic and kale add a nice boost of nutrition.

And the entire recipe comes together in one-skillet! It’s a healthy and easy alternative to packaged hashbrowns or fast-food French Fries.

How to make garlic home fries with kale

These delicious and crispy potatoes come together in just a few easy steps with basic ingredients.

Step 1: In a medium skillet, preferably a cast-iron one, heat the olive oil over medium-high heat.

Step 2: Add the potatoes and salt, then mix to combine.

Step 3: Cook, stirring often, until the potatoes get some color, about 8-10 minutes.

Step 4: Reduce heat to low and cover the pan. Continue cooking for another 8-10 minutes until you can easily pierce the potatoes with a fork.

Step 5: Add the garlic, kale, and water, then mix to combine. Cover the skillet and let everything cook for another 2-3 minutes, stirring occasionally, until the kale wilts.

Step 6: Season to taste with pepper and serve hot.

That’s it! This entire dish can be ready in about 30 minutes or less.

What to eat with this recipe

Now that you have delicious and crispy potatoes with kale, how should you enjoy them?

Of course, you can eat this dish just as it is. The kale is packed with vitamins and nutrients, and the potatoes are nice and hearty! I like to serve with some homemade ketchup for dipping.

Another option is to sprinkle on some cheddar for tasty cheesy potatoes. I made this dish with cheese for the kids once, and they’ve been asking for it that way ever since.

And finally, one of my favorite ways to enjoy potatoes is with two eggs cooked over easy! Add some bacon or lower-sodium sausage for the perfect all-American breakfast.

Storage

These potatoes are best right out of the skillet. Just like regular French Fries, they’re never quite as crispy when you try to reheat them.

But that doesn’t mean they aren’t worth saving! Leftovers can be stored covered in the refrigerator for up to 5 days.

Ingredients

  • 2-3 medium kale leaves (stems removed and finely chopped)
  • 1 tablespoon water
  • Freshly ground black pepper

Recipe Notes

This recipe is for 2 servings.
If you’d like to reduce the amount of fat in this recipe, use a nonstick pan and skip the olive oil or use cooking spray. You won’t get the nice brown bits on the potatoes, but they will still taste good.
Leftovers can be stored covered in the refrigerator for up to 5 days.
