Dark Chocolate Chip Muesli Cookies

These dark chocolate chip muesli cookies are low-fat, low-carb, and packed with chocolatey goodness! Think of them as an even better oatmeal raisin cookie.

Growing up, I really enjoyed the flavor of oatmeal raisin cookies. But I always thought they were missing one thing: chocolate.

These dark chocolate chip muesli cookies are all my oatmeal raisin cookie dreams come true! And they’re also low in fat, carbs, and sugar. So you can actually feel good about eating them.

Rather than adding my own raisins, I use a muesli that contains raisins as well as dates, sunflower seeds, flaxseed, almonds, walnuts, and a bunch of other wholesome ingredients! It’s a great way to easily add texture and flavor.

The rest of the ingredients are extremely simple. Flour, baking soda, salt, applesauce, brown sugar, vanilla extract, and an egg. Oh, and of course, some dark chocolate chips!

The next time you’re in the mood for a delicious cookie full of chocolatey goodness, indulge in one of these guilt-free cookies.

How to make dark chocolate chip muesli cookies

This is a pretty easy cookie recipe. Just mix the ingredients, scoop onto baking sheets, and throw them in the oven!

Step 1: Preheat the oven to 375°F. Lightly grease 2 baking sheets.

Step 2: In a medium bowl, whisk together the flour, baking soda, and salt, then set aside.

Step 3: Blend the applesauce, brown sugar, and vanilla extract with an electric mixer until smooth. Add the egg and mix well.

Step 4: ¼ of a cup at a time, add the flour mixture to the applesauce mixture, blending well after each addition.

Step 5: Fold in the muesli and dark chocolate chips.

Step 6: Scoop a tablespoon of the dough at a time and drop it onto the prepared baking sheet. You should get about 15 cookies per pan.

Step 7: Place in the oven and bake for 6 minutes.

Step 8: Rotate the pans top-to-bottom and front-to-back, then bake for another 5 to 6 minutes.

Step 9: Remove the cookies from the oven and let them cool on the pans for 5 minutes.

Step 10: Transfer the cookies to a wire rack to cool completely.

The cooling process is very important for the texture of these cookies. But if you just can’t resist and have to try one hot out of the oven, I won’t blame you!

What is muesli?

If you’re not familiar with muesli, it’s a cold cereal originally from Switzerland. It’s made from rolled oats and other ingredients like nuts, seeds, grains, and sometimes even fruit.

It’s basically a cross between oatmeal and granola, but healthier. And you can find tons of varieties with different fillings!

I love using muesli in this cookie recipe because it’s an easy way to add heart-healthy seeds and nuts without needing to get out those ingredients individually. Basically, it’s a big time saver.

Aside from these cookies, you can also enjoy muesli in a bowl with milk, as a topper for yogurt, or straight out of the package like trail mix.

Storage

I like to bake my cookies in large batches so there will be plenty to share with friends and family. I want to make sure they last for at least a few days.

This recipe is for 30 cookies, so you should hopefully have a few extras! Store them in an airtight container in the refrigerator for up to a week.

Ingredients

  • 3/4 cup whole wheat pastry flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon Kosher salt
  • 2/3 cup unsweetened applesauce or Cinnamon Applesauce
  • 3/4 cup light brown sugar

  • 1 cup Bob’s Red Mill Old Country Style Muesli
  • 6 ounces dark chocolate chips

If you aren’t a huge chocolate fan, you may want to reduce the amount of dark chocolate chips.
Leftovers can be stored in an airtight container in the refrigerator for up to a week.
