Looking for a quick, refreshing snack with some plant-based protein? Try these super-easy and tasty cucumber bites with hummus and tomatoes!

Cucumber Bites with Hummus and Tomatoes on a wooden serving board next to cherry tomatoes

When I’m looking for a quick and healthy snack, I usually make something with vegetables. Hummus with carrot sticks or a healthy dip with cucumber slices instead of crackers are some of my go-to’s.

So one day, I decided to combine the two! The result is these cucumber bites with hummus and tomatoes, and they are so delicious.

Not to mention, they’re also very simple to make. Just top crisp cucumber rounds with your favorite hummus and a dab of tomato.

There’s no better summer snack when cucumbers and tomatoes are both in season!

How to make cucumber bites with hummus and tomatoes

This recipe comes together in 4 steps and with only 4 ingredients.

Step 1: Slice the cucumber into rounds.

Step 2: Thinly slice the tomatoes crosswise.

Step 3: Spread the hummus evenly onto the cucumber slices, then top with the tomato slices.

Step 4: Sprinkle with fresh chopped parsley.

In 10 minutes or less, your hummus and tomato cucumber slices will be ready to enjoy!

Variations for this recipe

I think the flavor combination of the roasted red pepper hummus, tomato, and parsley is fantastic. But if you want to get a little creative with your toppings, go for it!

In place of the red pepper hummus, feel free to use another flavor of store-bought hummus. You could also make your own if you’re feeling adventurous.

For example, try my artichoke hummus with chopped roasted red peppers, capers, and fresh thyme. A sprinkle of feta on top would be wonderful.

Want to go in a completely different direction? Top the cucumber slices with sweet potato bean dip and chopped pecans.

Storage

Want to prep these bites ahead of time? Simply slice the cucumbers and tomatoes, then chop the parsley.

Then, when you’re ready to enjoy, all you have to do is assemble the ingredients! The sliced veggies and parsley will stay fresh in the refrigerator for up to 4 days.

Other healthy snack recipes

Vegetables are always my go-to for healthy snacks. If you get creative with the ingredients, you can end up with some amazing flavor combinations!

Here are a few of my favorite snack recipes I think you’ll enjoy:

  • Roasted Eggplant Paté with Sun-Dried Tomatoes
  • Homemade Low-Sodium Salsa
  • Smoked Salmon Spread

Hello: thanks for posting some nice little diabetic snacks! Just wanted to know if the carbs (16g) in the cuke bites with hummus and tomatoes “good” carbs? It seems high, but 8 pieces is a good amount. Thanks, Michele B. in Upstate New York

Hi Michele – Thanks for your question. “Good” carbs to me are those that have vitamins, nutrients, and fiber. These cucumber bites give you all three plus some plant-based protein. 16g carb fits into my meal plan for a snack, but your mileage may vary. Eat a smaller portion (say 4 pieces) if that works better for you.

Thanks for the snack suggestions. Always a challenge. We pop blueberries as an evening snack.

Hi Annette – We love blueberries too! Sometimes we mix them with plain yogurt and nuts/seeds as dessert.
