This creamy lemon-chive dressing is ready in minutes and proof that you can have a rich, satisfying salad dressing without packing in the calories or fat!

Salad dressings don’t need to be calorie-laden to be delicious. There are so many ways to top a salad without turning it into a heavy meal.

This creamy lemon-chive dressing is a perfect example! With the lactic touch of light cream, gentle acidity of the lemon juice, and pungent flavor of the chives, this all-purpose dressing will become a standard in your kitchen.

It’s great for dressing a simple green salad or dishes like couscous salad, potato salad, or light green bean salad. I even use it in my crab salad with lime and avocado recipe!

Best of all, it can be ready in five minutes or less. Everything comes together right in the jar for easy storage as well.

How to make creamy lemon-chive dressing

This recipe comes together in four simple steps. Let’s see how it’s done!

Step 1: In a jar, combine the lemon juice and salt.

Step 2: Cover with the lid and shake to dissolve the salt.

Step 3: Add the cream, chives, and lemon zest.

Step 4: Shake to blend. Taste for seasoning.

That’s it! The dressing can be used immediately. I recommend using a jar with a screw-top lid for super easy storage.

Will the dressing curdle?

Curdling refers to when the curd protein coagulates and forms clumps. Any milk or cream product will curdle given the right circumstances, such as the addition of acids or heat.

However, I have never had a problem with this dressing curdling. The greater the fat content of the milk or cream, the more it will resist curdling. I use a light cream with a 12% fat content, similar to half-and-half.

Storage

You can store the dressing in the refrigerator in an airtight container for up to 1 week. I recommend using a glass jar with a screw-top lid for easy storage and use.

When you’re ready to use it, be sure to give the jar a good shake to blend everything again. After that, it’s ready to go!

  • 2 tablespoons freshly squeezed lemon juice
  • ½ teaspoon fine sea salt
  • 1 cup light cream
  • ⅓ cup fresh chives (finely minced)
  • Lemon zest

  • In a jar, combine the lemon juice and salt.
