4-Ingredient Carnitas Posole (Instant Pot)

If you like quick stews with a little bit of kick, try this 4-ingredient carnitas posole! It’s a delicious dish that cooks right in your Instant Pot.

The inspiration for this recipe came from some leftover carnitas I had in my fridge. I felt guilty every time I saw them sitting there, so I finally decided to put them to good use.

This 4-ingredient carnitas posole is the perfect, delicious solution! And the whole recipe comes together in the Instant Pot in just a matter of minutes.

Simply combine the ingredients, wait a half an hour or so, and voila! You’ll have an amazing stew that tastes like it was simmering all day.

How to make 4-ingredient carnitas posole

Ready to see how easily this spicy stew comes together?

Step 1: In the electric pressure cooker, combine the broth, hominy with its juices, pork, and salsa. Stir to combine.

Step 2: Close and lock the lid of the pressure cooker. Set the valve to “sealing,” then select HIGH manual pressure and set the timer for 8 minutes.

Step 3: When the cooking is complete, hit Cancel and quick release the pressure.

Step 4: Once the pressure gauge drops, unlock and remove the lid.

Step 5: Spoon into bowls and serve immediately.

That’s it! I like to garnish mine with chopped avocado and cilantro for a boost of healthy fats and flavor.

Variations for this recipe

Even though this recipe is so simple, it can certainly be customized based on your tastes and preferences!

As I mentioned, the inspiration for this dish came from some leftover carnitas I didn’t want to go to waste. But if you don’t have any shredded cooked pork, just pick up carnitas from your favorite Mexican restaurant.

You could also make your stew with any other shredded meat. Chicken would be a delicious option.

Not a fan of spicy food? Or don’t want to spend time making homemade salsa? Just look for a mild salsa verde that doesn’t have too much added sodium or sugar.

Storage

This spicy stew is amazing, but the leftovers might be even better! I love the way the flavors of soups meld overnight.

Any extra can be stored covered in the refrigerator. It will stay fresh for 3-4 days unless your carnitas are already a few days old, in which case you’ll want to eat your stew within a day or 2.

Ingredients

  • 2 cups Chicken Bone Broth (or low-sodium store-bought chicken broth)
  • 1 can hominy (15 ounces – 425 grams)
  • 2 cups pork carnitas or shredded cooked pork
  • 2 cups Roasted Tomatillo Salsa (or store-bought salsa verde)

Instructions

  • In the electric pressure cooker, combine the broth, hominy with its juices, pork, and salsa. Stir to combine.

Recipe Notes

This recipe is for 4 servings of posole.
If you’re pressed for time, you can use a jar (16 ounces) of salsa verde instead of making your own.
Leftovers can be stored covered in the refrigerator for 3-4 days.
