Craving something fruity with a little bit of tang? This Strawberry Orange Cooler featuring strawberries, freshly squeezed orange juice, and tofu is just the ticket.
I just got back from a trip to Baltimore for the American Association of Diabetes Educators (AADE) conference and I can’t tell you how much I craved fruit while I was on the road. You don’t really get offered much fruit when you eat in restaurants.
When I got home, this Strawberry Orange Cooler was on the menu for breakfast. The strawberries I used were ripe and juicy, so I didn’t need any other sweetener. If yours aren’t, add a touch of honey if you can afford the carbs. One teaspoon of honey will add about 6g carb.
To counter-balance the carbs in this drink, I added silken tofu for a nice hit of plant-based protein. It provides a tangy creaminess too.
This cooler is thinner than a smoothie, so it’s easily drinkable. If you’d prefer a drink that doesn’t contain orange juice, check out Tropical Tofu Shake.
