Need an easy-to-make, yet relatively healthy, appetizer for a Super Bowl party? Try Nacho Celery Sticks – crunchy celery loaded with salsa and guacamole, then topped with cheddar cheese. You get nacho flavors without all of the calories and carbs.
You can make your own salsa and guacamole or use store-bought (I won’t tell). If you’re feeling ambitious, try Mango Guacamole, just make sure to dice your mango very finely.
Six of these Nacho Celery Sticks have 87 calories, 6g fat, and 6g carbs. Contrast that with an order of Nachos Supreme at Taco Bell which contains 440 calories, 23g fat, and 46g carbs. I know which I’d rather have.
Nacho Celery Sticks
- 1/4 cup salsa
- 1/4 cup guacamole
- 6 stalks celery cut into 3-inch sticks
- 6 tablespoons finely shredded cheddar cheese
In a small bowl, mix together the salsa and guacamole.
Spread salsa mixture on celery sticks and sprinkle with cheese.
If you want your celery to sit flat on the serving tray, cut a very thin slice off the rounded side.
