I always seem to have ripe bananas on hand, mainly because the CompostMaster buys bananas every time he goes to the store. And he’s been going to the store a lot lately. Usually he makes Banana Bread, slices it, and freezes it, but I was in the mood for something a little bit different. Then I saw Cookie + Kate’s recipe for Maple-Sweetened Banana Muffins.
I made the following very minor changes to the original recipe:
- Added in 1/4 cup dark chocolate chips.
- Added in 1/4 cup chopped walnuts.
- Skipped the sprinkling of sugar on top.
By adding in the chocolate and walnuts, I stretched the recipe to make 12 muffins instead of 11. The CompostMaster thought the muffins were too chocolately for a morning meal, but I found that one muffin plus a hard-boiled egg was a perfect breakfast for me, blood sugar-wise. One muffin (with my additions) contains 242 calories and 32g carb.
