We used a very sweet orange-fleshed watermelon and raspberries in our popsicles. Use any combination of melon and berries that speaks to you. Feel free to swap out the lemon juice for lime juice too. If you prefer “whole fruit” type popsicles, mix the melon and juice in the blender, then stir in the whole berries and freeze.
These low-calorie, all-fruit popsicles are a great way to cool off on a hot summer day.
- 3 cups watermelon chunks seeds removed
- 1 cup raspberries or blueberries
- 1/2 tablespoon lemon juice
Combine all ingredients in blender and mix until smooth.
Pour into popsicle molds (or use paper cups and wooden sticks).
Freeze until solid.
