Skinny Vanilla Almond Latte (Dairy-free)

Love vanilla lattes, but hate the calories and fat? Try this lightened up Skinny Vanilla Almond Latte.

Green tea is my hot beverage of choice most of the time, but every once in a while, I crave coffee. Sometimes I want a cappuccino after a restaurant dinner when everyone else is having dessert. Sometimes I want a latte when I meet a client in a coffee shop. And sometimes I just want a cup of coffee when I’m eating a big Southern-style breakfast. It just seems wrong to have green tea with ham and eggs.

Since I’ve reduced my caffeine consumption, I get really jazzed when I drink a cup or two of regular coffee. Why don’t I drink decaf? Because it just doesn’t taste as good to me. When I drink coffee, I want it to have a robust flavor, some caffeine (but not too much), and I want it to be smooth.

Enter Sundown blend from Don Tomas Coffee [1] (affiliate link). It has half the caffeine of regular coffee and a strong enough taste that it can substitute for espresso in drinks like this skinny vanilla almond latte. I gave a sample of Sundown to some coffee-loving friends of mine to try. “The coffee is smooth and easy to drink and it’s more flavorful than what we drink now,” they said.

One thing I really like about Don Tomas [2], the company, is that they give back to their community. The Tomas farm in Jinotega, Nicaragua provides schools and health care services to their farmers’ families.

Lightened up vanilla latte

Ingredients
  • ½ cup unsweetened almond milk
  • 1 teaspoon agave nectar or honey
  • 1 teaspoon vanilla extract
  • ½ cup freshly brewed coffee
Instructions
  1. Place almond milk, agave/honey, and vanilla in a deep microwave-safe cup (I used a Pyrex® measuring cup). Heat for about 1 minute on high.
  2. Mix with an immersion (stick) blender until the mixture is frothy. Pour into cup and fill rest of cup with coffee.
