May I just say that Greek-style lemon yogurt is one of my new favorite things? A 5.3-ounce cup has about 150 calories with 17g of carb, so it’s a perfect afternoon snack. Add some watermelon, a little honey, and a couple of ice cubes and you have a bright, refreshing Watermelon Smoothie for a hot summer afternoon.
The recipe below yields a smoothie that is a bit on the thin side. I like it this way, so I can drink it easily. If you prefer your smoothie to be more straw-worthy, cut back on the amount of watermelon.
If you can’t find lemon yogurt, vanilla or plain will do. But, trust me, if I can find it where I live, you’ll be able to find it too.
This smoothie is low in Sodium, and very low in Saturated Fat and Cholesterol. It is also a good source of Vitamin A and Vitamin C. A large portion of the calories come from sugars, but at 24g carb, it should be able to fit into your daily meal plan. You can always leave out the honey – the watermelon and yogurt are plenty sweet. I would definitely add a touch of honey if you use plain yogurt.
Refreshing smoothie featuring summer-fresh watermelon and lemon yogurt
- 2 cups watermelon seeded and cut into chunks
- 6 ounces nonfat Greek-style lemon yogurt
- 1 teaspoon honey
- 4 ice cubes
Load all ingredients into a blender and mix until smooth.
