Today is the first day of the food blogging challenge for Patricia Wells’ new cookbook, Salad as a Meal. Diabetic Foodie and eight other food bloggers will be trying recipes from the book and sharing our experiences. Over the next four weeks, you will see 12 articles about this book.
Let me just say that, so far, I have tried four recipes from Salad as a Meal and they have all been fabulous! Given that I live on a small island off the coast of North Carolina, I was worried the recipes would feature hard-to-find ingredients. There are some (salad burnet leaves, anyone?), but there are always easy-to-find substitutions (fresh parsley leaves).
During this challenge, I will be giving away two copies of Salad as a Meal, hot off the presses.
