Spraying the balsamic vinaigrette from a bottle kept it from sinking to the bottom of the platter. Each juicy bite of the salad had an even coating of dressing.
I adapted this recipe from one I found on my Whole Foods iPhone app. This salad is a good source of Protein, Vitamin A and Vitamin C although it is a bit high in Saturated Fat.
4 cups watermelon balls or small chunks, seeded
4 oz goat cheese
5 sprays balsamic vinaigrette
3 Tbsp chopped fresh basil
Arrange watermelon balls on large platter or plate. Crumble goat cheese on top. Spray with balsamic vinaigrette and top with basil.
Makes 4 servings
Per serving: 150 calories, 9g fat (6g sat), 22mg cholesterol, 157mg sodium, 13g carb, 1g fiber, 10g sugar, 7g protein
