There’s nothing better than a bowl of steaming oatmeal on a chilly morning. I was never a big fan of oatmeal growing up, but now I love it, especially when it’s topped with fruit and nuts. Rolled oats taste better and fill me up more than quick oats do.
If you can’t get fresh strawberries, use frozen (unsweetened) ones and defrost them for a couple of minutes in the microwave. If you don’t like soy milk, use regular fat-free milk.
This simple recipe is low in saturated fat, cholesterol and sodium. It is a good source of fiber, vitamin C, magnesium and manganese.
3/4 cup rolled oats
1-1/2 cup water
1 medium banana, sliced
1/2 cup strawberries, sliced
1/4 cup almonds, sliced
1/2 cup soy milk
Bring oats and water to a boil in a medium saucepan. Cover and reduce heat to a simmer. Cook about 10 minutes, stirring occasionally and adding water if needed to prevent sticking.
Place cooked oatmeal in two bowls and top each serving with half a banana, 1/4 cup strawberries, 2 Tbsp almonds and 1/4 cup soy milk. Sprinkle with cinnamon and serve.
