When I was first diagnosed type 2 (more than 17 years ago), I could eat pizza and still keep my blood glucose (BG) under control as long as I ate one slice plus a salad instead of my customary three slices. Over time, pizza became one of those trigger foods for me that always spiked my BG no matter what. I just learned to live without pizza (unless it had a cauliflower crust, of course).

Before eating one of the pizzas, my BG was 120. One hour later, my BG was 136; two hours later, it was 126. Try that with any other pizza!

Now, I’ve eaten gluten-free and low-carb pizzas before. Let’s face it, most of them have crust that tastes like cardboard. Real Good Pizza’s crust tastes delicious. I’m tempted to serve this pizza to my nephews and niece to see if they notice anything “weird” about the crust. I’ll bet they won’t.
