Three years ago today, I wrote my first post which began:
Welcome to Diabetic Foodie! This blog is for people who love food, love to cook and love to eat, but also just happen to be diabetic.
I’ve come a long way since then. I’ve met Patricia Wells and Curtis Stone. I’ve learned that gorgeous photos are a big part of having a food blog. Mine certainly aren’t gorgeous yet, but they are much better than they were three years ago. I’ve gotten to know some amazing bloggers via Virtual Potluck, Sunday Supper and many other projects. And I’ve gotten a lot of free stuff – cookbooks, kitchen tools, flour, grains, olive oil, cereal, snacks, cookware, eggs. The list goes on and on. The life of a food blogger is good.

To celebrate how much I love what I do, I’m giving away a Kobo Mini e-reader plus a copy of Healthy Snacks to Go by Katie Kimball of kitchenstewardship.com. Katie was kind enough to offer me a free copy of her e-book to give away and I’m very grateful.
If you aren’t familiar with the Kobo product line, it’s the independent bookstores’ answer to Kindle and Nook. The Grillmaster got the Kobo Glo for Christmas and he loves it. I’m not getting anything in return for talking about the Kobo brand, but I do like to support my local independent bookstores whenever I get a chance.

Blueberries/raspberries/apples in Greek yogurt…
My favorite healthy snack is an apple.
Blueberries,banana,nonfat plain yogurt, almond milk and flax seeds blended into a smoothie.
Celery and Blue Cheese Dressing
Cottage cheese with dried blueberries and walnuts. Fresh berries are good too, but i really like the dried ones….
My favorite healthy snack is a hard boiled egg with cayenne pepper! It’s filling and flavorful!
Banana and strawberry smoothies are my favorite healthy snack! Great giveaway and congratulations on 3 years!!
my favorite is sliced cucumber! the crunch satisfies my craving for chips. I just want to munch on them all day.

Congrats on your 3rd year blogging, Shelby! Time flies! And, what a great way to celebrate with this giveaway!. Favorite healthy snack is a small handful of mixed nuts or a small bowl of pistachios (they last a long time because of the time it takes to get the meat out of the shell.)
Apple slices or celery with a little organic peanut butter.
Healthy popcorn. You can eat a fairly large portion for a few calories and it satisfies my need for crunch!

Love the site ! Favorite treat is a crisp Braeburn apple ,chopped, 1 celery stock , chopped. 1 TBSP chopped nuts prefer walnut but pecan are good too. 1 marshmellow chopped and 1-2 tbsp blue cheese dressing ( I thin with a little water so everything is coated well.

Preparation
Combine sour cream and maple syrup in a small bowl; stir with a whisk.
Combine berries, and spoon into dessert dishes; pour maple cream over berries.

I love eating mixed almonds and nuts, but if I must pick one, I would definitely go for chestnuts!
Lately, I’ve really been liking fruit and nut balls–just dried fruit and nuts processed until ground and squished into balls. So much yum!
